                           Carrot Zucchini Bread

    3                    egg whites -- whipped
      1/2  C             applesauce -- at room temperature
      1/2  C             orange juice -- at room temperature
    1      Tsp           orange extract
    2      Tsps          vanilla
    2      C             zucchini -- grated
      1/2  C             carrot -- grated
      1/2  C             Carrots -- baby food, strained
      1/2  C             sugar
    1      tbsp          cinnamon
    3      c             flour
      1/2  tsp           salt
      1/2  tsp           baking powder
      1/2  tsp           baking soda
 
 Preheat oven at 350. Prepare pan (s) with cooking spray and flour. In a
 mixing bowl, combine egg whites, applesauce, orange juice, orange extract,
 vanilla, zucchini, and carrots. In another mixing bowl, combine sugar,
 cinnamon, flour, salt, baking powder, and baking soda. Mix wet ingredients
 with dry ingredients just until moistened. Pour batter into pan (s) and
 bake for 1 hour.
