                        Mini-Strawberry Cheesecakes

    2      cups          flour
      1/2  cup           powdered sugar
      2/3  cup           butter
   16      ounces        cream cheese -- softened
      1/2  cup           granulated sugar
    2                    eggs
   10      ounces        frozen strawberries -- thawed and undrained
                         fresh strawberries -- cleaned & sliced
 
 1. Preheat oven to 350 degrees. Mix flour and sugar. 2. Cut in butter until mix
 ture resembles fine crumbs. 3. Press firmly and evenly in bottom of ungreased r
 ectangular pan, 13 x 9 x 2 inches. 4. Bake 15 minutes. 5. Beat cream cheese in 
 medium bowl until smooth and fluffy. 6. Beat in granulated sugar and eggs. 7. S
 tir in strawberries (undrained). 8. Spread cream cheese mixture over baked laye
 r. 9. Bake 20 to 25 minutes or just until center is set. 10. Cool completely. C
 over loosely and refrigerate about 4 hours or until firm. 11. Cut into about 2 
 x 1 1/2 inch bars. Garnish with sliced strawberries, if desired.
