                         White Chocolate Cheesecake

                         -----Crust-----
    1      Package       Graham Crackers -- crushed
    6      Tablespoons   Unsalted Butter
    2      Tablespoons   Sugar
                         -----Filling-----
   10      Ounces        White Chocolate -- finely chopped
      1/2  Cup           Heavy Whipping Cream -- at room temperature
    1      Pound         Cream Cheese -- at room temperature
    4      Large         Eggs, Separated -- at room temperature
    4      Teaspoons     Vanilla
 
 For the crust:
 Melt butter.  Combine cracker crumbs, butter, and sugar and press mixture
 onto bottom of 9 springform pan.  Bake at 350 degrees for 8-10 minutes.
 When pan has cooled, butter sides.
 
 For the filling:
 In a double boiler, melt chocolate, stirring frequently.  Add cream and
 blend well.  Remove pan from water and cool slightly.  Meanwhile, beat
 cream cheese until smooth.  Add egg yolks and continue to beat.  Add
 white chocolate mixture, and vanilla.  Beat for about 3 minutes.  Beat
 egg whites until soft peaks form.  Blend whites into white chocolate
 mixture.  Pour into prepared pan and bake at 350 for one hour.  Turn
 off the oven and leave pan in for additional hour.  Chill and serve.
