                          Brenda’s Oatmeal Cookies

    2      cups          flour
    1 1/2  teaspoons     baking powder
    1      teaspoon      baking soda
    1      teaspoon      salt
    2                    eggs
    1      cup           shortening
    2      teaspoons     vanilla
    1      cup           sugar
    1      cup           brown sugar
    2      cups          oats -- rolled (raw)
                         chocolate chips
                         walnuts -- chopped
 
 Combine flour, baking powder, baking soda and salt; sift.  Cream shortening
 and vanilla in a large bowl.  Add sugars a little at a time.  Add eggs.  Stir
 well.  Add flour a little at a time.  Add oatmeal.  Then add chips and nuts
 (optional).  Drop by spoonful on UNGREASED cookie sheet.  Bake at 375° for 10
 - 12 min.  Makes 4 dozen cookies.

 NOTES : Don't use instant oatmeal.  It makes the cookies mushy.  I prefer to
 use DARK brown sugar.
