                       Corn Muffins With Honey Butter

   Amount  Measure       Ingredient -- Preparation Method

    2      cups          flour
    2      cups          cornmeal
    1      cup           carnation dry milk powder
      1/4  cup           sugar
    2      tablespoons   baking powder
    1      teaspoon      salt
      1/2  teaspoon      baking soda
    2 2/3  cups          water
      1/2  cup           margarine -- melted
    2                    beaten eggs
    1      tablespoon    lemon juice
                         ***HONEY BUTTER***
    2      tablespoons   honey
      1/2  cup           softened butter -- (no substitutes)
 
 1.  In a bowl, combine flour, cornmeal, milk powder, sugar, baking powder, salt
  and baking soda.
 2.  Add water, butter, eggs and lemon juice; stir until dry ingredients are moi
 stened.
 3.  Spoon into 24 greased muffin cups.  or 18 if you are using the large sized 
 tins.
 4.  Bake at 425 degrees for 13 to 15 minutes. In a small mixing bowl, beat toge
 ther honey and softened butter.
 5.  Serve with the muffins. Makes 24 muffins.
