       Title: Gingerbread with Apple

       2 c  All-purpose flour; unbleache
   1 1/2 ts Baking powder
       1 ts Baking soda
   1 1/2 ts Ground ginger
     1/4 ts Salt
       1 lg Egg
       2 lg Egg whites
     1/2 c  Brown sugar, packed
     1/3 c  Molasses
       2 tb Vegetable oil
     1/2 c  Buttermilk
       1 c  Apple; unpeeled, shredded

        Preheat oven to 350 degrees; coat a 9 x 5-inch loaf pan with nonstick
   cooking spray.  Whisk the flour with the baking powder, baking soda, ginger
   and salt; set aside. Beat the egg, egg whites, brown sugar, molasses and
   oil with an electric mixer on medium speed until smooth. Add the buttermilk
   and beat again. Stir the flour and apple into the batter by hand just until
   combined.  Scrape the batter into the prepared pan and bake for 50 to 60
   minutes, or until a toothpick inserted int the center comes out clean. The
   crust may crack.  Cool in the pan on a wire rack for about 10 minutes. Turn
   out onto a wire rack and cool completely. Makes 1 loaf. Penny Halsey
