                              Spicy Thai Slaw

      1/2  cup           dry roasted peanuts -- unsalted
    2      cloves        garlic -- minced
    4                    scallion -- minced
    2      medium        serrano pepper
    1      pound         Savoy cabbage
      1/2  pound         cucumber
                         Dressing
      1/4  cup           rice vinegar
    2      tablespoons   sugar
      1/2  teaspoon      curry powder
           dash          soy sauce
    2      tablespoons   sesame oil -- light
      1/3  cup           safflower oil
    3      tablespoons   cilantro
 
 Using a food processor grind peanuts until coarsely chopped and place in a mixi
 ng bowl. Add garlic and scallions to peanuts.
 
 Remove stems and seed from chilies and dry with paper towels. Chop carefully to
  avoid getting juice on skin or in eyes. Shred cabbage and add chilies and cabb
 age to peanut mixture. Peel, seed, and chop cucumber and toss in with other ing
 redients.
 
 Whisk together vinegar, sugar, curry, soy sauce, and add oils gradually until w
 ee blended. Taste for seasoning and add salt if desired. Pour dressing over sal
 ad and mix in cilantro. Cover and refrigerate for several hours, allowing flavo
 rs to blend.
