                      Aunt Bessie’s Red Beans And Rice

    1      pound         dried red kidney beans
    1      package       beef smoked sausage -- cut into bite size
                          -- pieces
    1      clove         garlic
    1      medium        onion
      1/2                green pepper
    2      tablespoons   oil
                         Salt -- to taste
                         Cooked rice
 
 Wash and pick over beans.  Cover with water.  Add remaining ingredients and sim
 mer for 1 to 1 1/2 hour or add water as needed until beans are tender and soup 
 is thick.  Serve over cooked rice.
