                             CHUNKY APPLESAUCE

    8      cups          chopped peeled tart cooking apples,
                         (about 3-1/2 pounds)
      1/2  cup           packed brown sugar
    2      teaspoons     vanilla extract
    1      teaspoon      ground cinnamon
 
 Place all ingredients in a large saucepan or Dutch oven. Cover and cook over
 medium-low heat for 30-40 minutes or until apples are tender. Remove from
 the heat; mash apples (a potato masher works well) until sauce is desired
 consistency. Serve warm or cold.
 
 YIELD: 6 servings (about 3-1/2 cups)
