       Title: EMERIL'S FRIED PLANTAINS

    4.00 ea Ripe plantains
            Oil for frying
            Salt
            Freshly ground pepper
 
   Preheat the fryer. Peel the plantains and slice thinly on the bias.
   Fry in batches until golden brown, about 2 minutes, stirring
   occasionally. Remove from the oil and drain on paper towels. Season
   with salt and pepper.
