                         German Potato Salad For 50

   15      Lb.           new potatoes
      1/2  C.            finely chopped onions
      1/4  C.            salt
    1 1/2  Tsp.          pepper
    2      Tbsp.         sugar
    1      C.            finely cut green onions
    2      C.            oil
    2 1/4  C.            white vinegar
    1      Qt.           well seasoned soup stock (chicken -- beef or veal)
 
 Scrub potatoes. Cook in salted water until just tender;
 drain well. Cover and cool. Peel and slice. Add onions.
 Sprinkle on salt, pepper and sugar, then add oil and vinegar.
 Last, add soup stock; mix carefully.
 Note: Use only pink new potatoes, sliced very thin. Be
 sure stock is added last. It must be well seasoned.
