1 cup uncooked rice
 1 lb. lean ground beef
 1/2 cup chopped onion (about 1/2 of a medium onion)
 5 or 6 green onions, chopped
 3 or 4 cloves of garlic, chopped
 1 celery stalk, chopped
 1/2 of a medium bell pepper, chopped
 1/2 tsp. thyme (optional)
 Salt, ground black pepper, Tabasco or other Louisiana hot sauce
 Steam the rice and set aside.
 In a large skillet, partially brown the ground beef and  pour off
 excess fat. Then add thyme and chopped vegetables.  Continue cooking
 over medium heat till the onions are transparent.  Season to taste
 with salt, black pepper, and Tabasco sauce.  Stir in the rice and
 adjust seasonings to taste. Cook a little longer over low heat, then
 serve.  If it seems dry while cooking, add a little water or boullion
 to keep it moist.
