                                 Green Rice

   Amount  Measure       Ingredient -- Preparation Method

    1      stick         butter
    3      cups          cooked white rice
    1      cup           Cheddar cheese -- grated
    1      tablespoon    onion -- grated
    1      8 oz pkg      broccoli florets -- thawed
    1      sm can        evaporated milk
    1      can           cream of mushroom soup, condensed
                         Additional grated Cheddar cheese -- for topping
 
 Preheat oven to 350 degrees F.  Melt butter in an ovenproof 8“x8 casserole
 dish and set aside.  Combine onion and broccoli in a small saucepan with a
 small amount of water and cook until just cooked.  Combine all ingredients
 and blend well; spread in casserole dish and top with additional Cheddar
 cheese, as desired.  Bake for 10 to 15 minutes or until heated through.
  Serves 8.
