                        Knott’s Berry Farm Pea Salad

                         ***FOR THE SALAD***
    3      pounds        frozen peas -- rinsed in hot
                         -- water but not thawed
    2      cups          sweet pickle chips -- chopped
    1      cup           diced red bell peppers
    2      cups          diced celery
   12                    hard-boiled eggs -- whites only, sliced
      1/2  cup           finely chopped onions
    1      cup           cubed american cheese
                         ***FOR THE DRESSING***
    4      cups          mayonnaise
      1/4  cup           sugar
      1/4  cup           chopped sweet pickle chips
    1      tablespoon    diced red bell pepper
 
 1.  In a large bowl, combine salad ingredients.
 2.  In a separate bowl mix dressing ingredients.  Add to salad mixture and gent
 ly toss.
 Yield: 4 pounds
