                                Jicama Salad

      1/2  small         jicama -- peel and julienne
      1/2  small         red bell pepper -- seeded and julienne
      1/2  small         yellow bell pepper -- seeded and julienne
      1/2  small         zucchine (green part only) -- cut julienne
      1/2  small         carrot -- peel and julienne
    4      tablespoons   cold-pressed peanut oil
    2      tablespoons   lime juice
                         salt -- to taste
                         cayenne pepper -- to taste
 
 Combine vegetables, oil, lime juice, salt and cayenne to taste and toss to
 mix
 well.  May be prepared several hours ahead and refrigerated.  In that case, 
 omit salt until almost ready to serve.
 
 Serve as a garnish to Lobster Tacos (or other Southwestern dishes).
