                            Basil Chicken Salad

    3      cups          cooked chicken -- cubed
    1 1/2  cups          celery -- diced
      1/4  cup           chopped chives -- or scallions
    1      cup           lowfat sour cream
    1 1/2  cups          fresh basil -- chopped
                         ground black pepper -- to taste
                         salt -- to taste
 
 In a large bowl combine chicken, celery, chives, sour cream and
 basil; mix lightly with a fork.  Just before serving, add salt
 and pepper to taste.
 
 Serve on a bed of lettuce or on croissants or kaiser roll.

 NOTES : Tastes best if refrigerated 3-4 hours to overnight
 before serving.
