                                 Corn Salad

    1      16 oz can     whole kernel corn -- drained
      1/2  c (2 oz)      cheddar OR  swiss cheese -- cut in 1/4 cubes
      1/4  c             chopped green bell pepper
      1/4  c             chopped onion
      1/4  c             chopped cucumber
      1/4  c             sweet pickle relish
      1/2  c             Thousand island salad dressing
                         lettuce
 
 In bowl combine drained corn, cheese cubes, green pepper, onion, cucumber, and 
 pickle relish.  Fold in dressing.  Cover; chill several hrs or overnight.  Serv
 e in lettuce cups.

 NOTES : Chilling this salad overnight helps blend the flavors.
