                               Spinach Salad

   Amount  Measure       Ingredient -- Preparation Method

    1      Clove         Garlic
    1 1/2  Bags          Fresh Spinach
    2      Sm            Onions -- chopped
      1/4  Lb            Roquefort Cheese -- crumbled
    4                    Hard-Boiled Eggs -- finely chopped
                          -- <Dressing>
    1      C             Cooking Oil
      1/3  C             White Wine Tarragon Vinegar
    1      clove         Garlic
    1      tsp           Salt
                         Black Pepper -- coarsely ground
                         Paprika
      1/2  tsp           Mustard Powder
 
 Rub large salad bowl well with garllic.  Wash and dry spinach and break
 into small pieces.  Place a layer of spinach, onion, and cheese in the
 bowl; repeat until bowl is filled.  Put a large clove of garlic on a
 toothpick and place in center of salad.  Refrigerate all day or overnight.
 When ready to serve, remove garlic and add 4 finely chopped hard-boiled
 eggs.  Toss with the dressing.
 
 FOR THE DRESSING:
 
 Combine above ingredients.
