      1/2  Cup           Olive oil
    2      Teaspoons     Red wine vinegar
    1      Teaspoon      Parsley -- Minced
    1      Pound         Artichoke hearts -- Quartered
    1                    Roma tomato -- Diced
      1/4  Cup           Red onion -- Slivered
                         Salt And Pepper -- To Taste
 
 Combine well: oil, vinegar, parsley, salt and pepper. Add artichoke hearts,
 tomato, and onion and toss well.
