                     Spinach Salad with Bacon and Apple

    1      pound         spinach -- fresh
    5      slices        bacon
      1/3  cup           almond -- slivered
      1/4  cup           almond oil
    3      tablespoons   tarragon vinegar
           dash          sugar
                         salt and pepper
    1      teaspoon      dry mustard
    3                    scallions and tops -- thinly sliced
    1                    red apples -- unpeeled and diced
 
 Wash spinach thoroughly. Remove stems, and discard discolored leaves. Dry and c
 risp in refrigerator.
 
 Fry bacon until crisp. Remove slices to drain, pour off grease and place almond
 s in pan. Stir over medium heat until toasted. Drain on paper towels.
 
 To prepare dressing combine almond oil, vinegar, sugar, salt, pepper, and musta
 rd. Whisk until blended and set aside.
 
 Tear spinach into large pieces, and place in a large salad bowl with scallions,
  apples, and almonds. Crumble bacon and add. Just before serving rewhisk dressi
 ng, pour over salad, and toss.
