                            Fruited Quinoa Salad

    3      cups          quinoa -- cooked
    8 3/4  ounces        can apricot halves -- drained and chopped
    1      each          naval orange -- sectioned
    1      cup           seedless red grapes -- halved
      1/4  cup           scallions -- sliced
      1/4  cup           fresh parsley -- chopped
      1/4  teaspoon      black pepper
                         salt
 
 In a medium bowl, toss quinoa, apricots, oranges, grapes, scallions,
 parsley and black pepper. Season to taste with salt, if desired.
