      1/4  cup           cider vinegar
    2      tablespoons   honey
    1      tablespoon    olive oil
      1/2  teaspoon      minced garlic
      1/4  teaspoon      salt
                         jalapeno peppers -- minced
                         fresh or canned -- to taste
    4      cups          mixed greens
    8      ounces        kidney beans -- drained
    2                    honey barbecued chicken breasts -- see recipe
                         approx 1-1/2 cups shredded
    4      ounces        pepper jack cheese
                         approx 1-cup shredded
    1                    tomato -- quartered
 
 In medium bowl, whisk together vinegar, honey, oil, garlic, salt and
 jalapeno. Set aside. Divide salad greens between two plates. Layer each
 evenly with beans, chicken, cheese and tomato. Drizzle with dressing.
