                    Carrots, Cashews and Dates in Yogurt

    2      cups          plain yogurt
    3      medium        carrots, peeled -- shredded
    6      pitted        dates, sliced into thin strips -- or rounds
    2      Tbl           golden raisins soaked in hot water -- for 10
 min/drained
    3      Tbl           dry roasted chopped cashews -- almonds or pecans
    1      tsp           grated orange or lime zest
    2      Tbl           fresh orange juice -- strained
    2      Tbl           granulated maple -- or date sugar
      1/4  tsp           cardamom seeds, coarsely crushed -- optional
 
  1. Drain yogurt in three thicknesses of cheesecloth for 2-3 hours. ( Tie
 cheesecloth up into a bundle so that you can hang it where it can drip and
 drain into a bowl. Liquid can be saved and used in recipes which call for
 water or broth.)
  2. Press carrots between your palms to extract exess juice. Place drained
 yogurt in a 1- quart bowl and whisk until smooth and creamy. Add the
 remaining ingredients, and stir until blended. Serve at room temp. or chill
 for 1-2 hours.
