                          Roberta’s Cucumber Salad

    3                    cucumbers
                         (2 peeled, 1 unpeeled, both diced)
    1 1/2  cups          plain yogurt
      1/2  cup           finely chopped fresh mint
    1      tablespoon    lemon juice
                         Salt and pepper
 
 Mix together the cucumbers, yogurt, mint, and lemon juice. Season to taste with
salt and pepper. Cover and refrigerate until ready to serve.
