                      Country Garden Tortellini Salad

   18      Ounces        Fresh Cheese Tortellini
    1      Cup           Sliced Carrots
    1      Cup           Cherry Tomatoes -- halved
    8      Ounces        Frozen Asparagus Spears (Thawed) -- in 1 pieces
    6      Ounces        Frozen Snow Pea Pods -- thawed
      2/3  Cup           Sliced Radishes
    1      Small         Purple Onions -- sliced thin
    3      Tablespoons   Water
    2      Tablespoons   Lemon Juice
    2      Tablespoons   Cider Vinegar
    1 1/2  Tablespoons   Olive Oil
      1/2  Teaspoon      Pepper
      1/4  Teaspoon      Salt
 
 Cook and drain the tortellini  without any fat or salt. Rinse with cold
 water and drain well. Reserve
 Steam carrots for 3-5 minutes or until crisp-tender.
 Combine the tortelllini,carrots,cherry tomatoes,asparagus,pea pods,
 onions and radishes in a salad or large serving bowl.
 Combine the water with remaining ingredients and stir well.
 Pour over tortellini salad and toss gently. Cover and chill
 Yield 11 1 cup servings
