                           Barley Stuffed Peppers

    4      medium        green peppers, cored seeds & -- membrane removed
                         Filling
    8      ounces        hot or sweet Italian sausage -- casings removed
    1      cup           onion -- coarsely chopped
    1      teaspoon      garlic -- minced
      1/4  teaspoon      dried thyme
    3      cups          cooked pearl barley (yield from 1 cup)
    1      can           tomato sauce
 
 Heat oven to 350.  Bring a large pot of water to a boil; add peppers and 
 boil
 2 to 3 minutes until crisp-tender.  Drain.
 For filling:  Put sausage, onion, garlic and thyme in a large skillet.  
 Cook
 7 to 8 minutes over medium heat, stirring often and breaking up meat with 
 a
 spoon until sausage is browned and onions are tender.  Stir in barley and
 tomato sauce.  Remove from heat.  Spoon mixture into peppers.  Put peppers 
 in
 a baking dish.  Cover and bake for 25 to 30 minutes until tender.
