                         Quelites - Spinach & Beans

    1 1/2  pounds        fresh spinach
    2      tablespoons   chopped onion
    2      slices        bacon
    1      tablespoon    crushed red chile
    1      cup           cooked pinto beans
    1      teaspoon      salt
 
 1. Fry bacon in a skillet, remove and finely chop.
 2. Wash spinach well and steam for 10 minutes.
 3. Remove and finely chop. In the same skillet, sauté onions in the bacon fat.
 4. When tender, add spinach, salt, red chile and beans.
 5. Continue cooking for 5 more minutes. Serve hot with tortillas.
