                             Vegetable Fritters

      2/3  C.            milk
    1      Tbsp.         oil
    1      C.            flour
    1      Tsp.          salt
 
 You can make fritters out of practically any cooked
 vegetable. Green beans, wax beans, carrots and summer squash
 are very good; sliced tomatoes are marvelous; even turnips are
 good. Drain the vegetable. Make a batter out of egg, milk,
 oil, flour and salt. (For a thinner batter, use 1 cup milk.)
 Dip vegetables in batter and fry in hot fat until lightly
 browned, about 3 minutes. Drain and serve.
