                                Baked Grits

    1      cup           regular or quick-cooking grits
      1/2  pound         sharp cheddar cheese -- grated
    8      tablespoons   butter
    3                    eggs -- well beaten
      1/3  cu + 1 TBS    milk
 
 Preheat the oven to 350 degrees.  Cook the grits according to
  package directions.  Regular girts require 25 to 30 minutes of
  slow cooking;  quick-cooking grits will take 3 to 5 minutes.   
 Stir in the cheese, butter, eggs, and milk and pour into a buttered 
 3-cup baking dish.  Bake 40 minutes or longer, or until set.

 NOTES : This is a basic baked grits recipe.   Variations in other 
 recipes include adding onions, garlic, or scallions, jalepeno 
 peppers, Worchestershire sauce, Gruyere and Parmesan cheese instead
