                         Carrot And Onion Stir-Fry

           Tbsp          Butter -- 3/4 Stick
    1      Med           Onion -- thinly sliced
    6      Med           Carrots -- julienned
    1      Tbsp          Sugar
    1 1/2  Tbsp          Dried tarragon -- crumbled
                         Salt and pepper
 
 Melt butter in lg heavy skillet over med heat.  Add onion and stir until 
 softened, 3 minutes. Increase heat to med high.  Add carrots and stir 
 until just crisp-tender, 5 minutes. Stir in sugar and tarragon.  Cook 2 
 min.  Season with salt and pepper.
