                     Green Beans And Crisp Onion Rings

    2      tablespoons   all-purpose flour
    1      tablespoon    sugar
    1      teaspoon      salt
    1      small         red onion -- cut into
                         -- 1/4-inch-thick slices
                         vegetable oil -- for frying
      1/2  pound         green beans -- trimmed and cut
                         -- into 3-inch pieces
      1/2  tablespoon    unsalted butter
    1      teaspoon      worcestershire sauce
 
 In a small bowl whisk together flour, sugar, and salt.  Separate onion slices i
 nto rings and toss in flour mixture to coat.
 
 In a 9-inch skillet heat 1/2 inch oil to 380øF.  on a deep-fat thermometer.  Sha
 ke off excess flour from half of onion rings and fry them, turning, until golde
 n 1 to 2 minutes.  Transfer onion rings with tongs to paper towels to drain and
  fry remaining onion rings in same manner.
 
 In a vegetable steamer set over boiling water steam beans, covered, about 6 min
 utes, or until tender.  In a large bowl toss beans with onion rings, butter, Wo
 rcestershire sauce, and salt and pepper to taste.
