                               CORN FRITTERS

                         Vegetable oil
    1      cup           all-purpose flour
      1/2  cup           milk
    1      teaspoon      baking powder
    1      teaspoon      salt
    1      teaspoon      vegetable oil
    2                    eggs
    1      can (16 oz)   whole kernel corn -- drained
 
 Heat oil (3 to 4 inches) in Dutch oven to 375F. Mix remaining ingredients
 except corn with hand beater until smooth. Stir in corn. Drop by rounded
 tablespoonfuls into hot oil. Fry about 5 minutes or until deep golden brown;
 drain on paper towels. Serve with maple syrup if desired.
 
 YIELD: 6 to 8 servings
