                            Fluffy Corn Fritters

    4      Large Ears    fresh corn
    4                    egg whites
                         salt
      1/4  C.            vegetable oil
 
 Light as a feather Corn Fritters, fantastic when topped
 with maple syrup or simply delicious when served on their own.
 Grate as much corn as is possible by rubbing the ears of
 corn against the grater. Scrape the corn with a table knife to
 remove any remaining juice. In another bowl, beat the egg
 whites until stiff. Put the salad oil in the skillet and heat
 to moderate high. Gently fold the beaten egg whites into the
 grated corn. Do not stir or mix too roughly. Spoon the corn
 and egg white mixture a tablespoonful at a time into the hot
 oil. Fry until golden and then turn gently and fry until done.
 Sprinkle with salt. Serve immediately while very hot.
