We love eggplant grilled.  Actually, there are two restaurants in town 
 who serve it that way.  One grills it with lots of other veggies and 
 serves it in a burrito with pinto beans and rice, lettuce, tomtoes and 
 onions and lettuce.
 The second one puts it on a skewer and grills it with onions and serves 
 it on a bed of brown rice.  Both ways are good.
