       2    red onion
       2 c  milk
       1    bay leaf
     1/2 c  flour
       2 t  peanut oil
       2 t  unsalted butter
            salt
            pepper
 
 cut three 1/2-inch thick slices from the widest part of each onion 
 reserve remainder for another use 
 carefully arrange slices in a single layer in a baking pan
 pour milk over the onion slices to cover 
 cover and chill for 3-4 hours, carefully turning once remove from milk,
 allowing excess to drip off 
 coat well in flour 
 heat oil and butter in a skillet, over a moderate flame 
 add onions and pan-fry until browned well on both sides season with salt
 and pepper 
 serve hot
