                            Sweet & Sour Onions

    3      lbs           small onions
                         olive oil
    1      c             raisins
      1/4  c             vinegar
    2      tsps          brown sugar
                         thyme branch or bay leaf (optional)
 
 Take onions, cut an X in the root end, and blanch them in boiling water for
 30 seconds.  Rremove the skins, saute them in olive oil for a few minutes,
 add water to a depth of about an inch, and cook until they soften a bit,
 about 10 minutes.
 Then add raisins, vinegar, sugar, salt and pepper; cover and simmer slowly
 for around an hour until the onions are golden and tender.  If there is
 excess liquid in the pan after an hour, remove the lid, raise the heat
 slightly and cook until the liquid remaining is thick and syrupy.
 You may add a thyme branch or a bay leaf to the simmering onions.
