                      Scalloped Potatoes-Joni’s Oldie

    4      Cups          Potatoes -- raw sliced thin
      2/3  Cup           Onion -- minced
    2      Tablespoons   Flour
    1      Teaspoon      Salt
      1/8  Teaspoon      Pepper
    2      Tablespoons   Butter
    1 1/2  Cups          Milk -- scalded
                         -----VARIETY'S-----
      1/4  Teaspoon      Curry to the flour
                         -----HAM SCALLOPED TATER'S-----
    2      Cups          Ham;cooked -- diced or strips
      1/2  Cup           Cheddar cheese -- grated
 
 Heat Oven to Medium Hot-375 degrees. Arrange layer of potatoes in greased 
 2 quart baking dish. cover with some onions;sprinkle some of the combined 
 flour,salt and pepper on top. Dot with dollop of butter, Repeat layers 
 until all the ingredients are used up, ending with dollops of butter on 
 top. Pou the scalded milk over all;Sprinkle with paprika. Cover and Bake 
 in moderately hot oven for 45 minutes. Uncover; bake 15 minutes longer or 
 until tender. Makes 4 servings. Variaty: 1. Add 1/4 tspn curry powder to 
 your flour. 2. Add diced or strips of cooked Ham to your dish about 2 cups 
 , layer with the potatoes and onions. 2. Add grated cheese, cheddar or 
 sharp, layering with the potatoes and can also add with the ham.
