                          Spinach And New Potatoes

    6                    new potatoes -- (6 to 7)
    1      Pkg.          fresh green spinach
                         homemade pimento cheese or grated sharp
                         cheese
    1      Medium        onion -- sliced
                         olive and sesame oil
                         seasoned bread crumbs
                         Sauce for Layering:
    1      Tbsp.         pure butter -- (1 to 2)
    1      Tsp.          dry chicken bouillon
    1      Tbsp.         flour
    1      C.            evaporated milk
    1      Pinch         nutmeg and thyme to taste
                         fresh ground pepper and salt to taste
    2      Tbsp.         sour cream -- (2 to 3)
 
 Boil potatoes with skin on. Cool to peel. “Sweat”
 package spinach (washed leaves steamed in pan with lid on).
 Make sauce: Melt butter and add dry bouillon and
 seasoning to taste. 
 Sprinkle flour over until combined completely. 
 Gradually add milk until thick. Introduce pimento
 cheese and add sour cream with heat off. Peel potatoes and
 layer them alternately with spinach and sauce in casserole.
 Top with sliced onions in olive oil and sesame oil. Make a
 ring of pimento cheese on top with seasoned bread crumbs inside
 and outside ring. Heat for serving.
