                    Sweet Potatoes with Oatmeal Topping

    3      large         sweet potatos
      1/3  stick         butter -- softened
    3      T             firmly packed brown sugar
    3      T             orange juice
    3      T             pineapple-orange marmalade
    2      t             finely grated fresh gingerroot
    1      t             salt
                         Topping:
      1/2  c             rolled oats
      1/2  c             firmly packed brown sugar
      1/4  c             flour
      1/2  t             cinnamon
      1/4  c             butter
 
 Prick potatoes and microwave on high until soft. Scoop flesh into large
 bowl and mash with butter, sugar, juice, marmalade, gingerroot and salt.
 Spread mixture evenly in 2-qt. baking dish sprayed with non-stick spray.
 
 Preheat oven to 400F
 
 Using pastry cutter, combine topping ingredients until mixture resembles
 coarse meal. Sprinkle topping over potato mixture and bake in middle of
 oven until topping is lightly browned, about 25 minutes.
