       Title: SPINACH, MUSHROOMS, AND BROWN RICE WITH CHEES

       Yield: 6 servings
  
       1 tb Olive oil
       3 tb Butter
       1 lg Garlic clove -- minced
       1 c  Mushrooms -- sliced
   1 1/2 lb Spinach -- shredded
            (about 5 cups)
     1/4 ts Pepper
   1 1/4 c  Cheddar cheese -- shredded
     1/2 c  Cottage cheese -- small
            Curd
       3 c  Short-grain rice -- cooked
       6 sl Mozzarella cheese
            Paprika
  
   Preheat oven to 400.  Oil an 8 square baking dish.
   
   Heat oil and butter in a 10 inch skillet.  Add garlic
   and mushrooms and cook,
   stirring, for 1 minute.  Add spinach and stir and cook
   about 2 minutes, or until spinach wilts.  Stirin
   pepper, cheddar cheese, and cottage cheese and set
   aside.
   
   Make a layer of rice on bottom of baking dish.  Spoon
   spinach cheese mixture
   evenly over rice.  Top with mozzarella cheese and
   sprinkle with paprika. Bake for 8 to 10 minutes then
   broil for about 1 minute, or until cheese is bubbly
   and brown.  Cut into squares and serve very hot.
