                         Yellow Squash Casserole #2

      1/4  C.            mayonnaise
      1/4  C.            chopped onion
      1/2  C.            cracker crumbs -- divided
    1                    egg -- beaten
    1      Tsp.          sugar
      1/4  Tsp.          salt
      1/8  Tsp.          pepper
    1      Lb.           yellow squash -- cooked,
                         drained and mashed
      1/4  C.            shredded cheese -- (1 oz.)
 
 Combine mayonnaise, onion, 1/4 cup cracker crumbs, eggs,
 sugar, salt and pepper. Add squash. Mix well. Place mixture
 into lightly greased 1 quart casserole. Sprinkle remaining
 cracker crumbs over squash mixture. Bake, uncovered, in a 350 degrees
 oven for 25 to 30 minutes. Sprinkle cheese on top. Bake 5
 minutes or until cheese melts. Makes 4 servings.
