                           Squash-corn Casserole

   Amount  Measure       Ingredient -- Preparation Method

    3                    zucchini (or yellow -- (3 to 4)
                         summer squash) sliced
    1      cup           Whole kernel corn
      1/3                Onion -- chopped
    1                    Jalapeno pepper -- seeded
                         and chopped
                         Salt to taste
 
      Mix above ingredients and cook (or steam) until tender.  Drain and
 top with:  3/4 cup grated cheddar or Monterey Jack cheese.  Bake about
