       Title: Zucchini-Carrot Casserole
  Categories: Vegetables, Side dish, Easy
       Yield: 4 Servings
 
       2 tb Butter or margarine
       2 md Zucchini, sliced
       2    Carrots, sliced
       1 sm Onion, chopped
       1    8 oz. container sour cream
       1 c  4 oz. shredded Cheddar
            -cheese
     1/2 ts Salt
     1/2 ts Pepper
       2 tb Italian-seasoned breadcrumbs
 
   Melt butter in a large skillet over medium heat; add zucchini,
   carrot, and onion, and saute 8 to 10 minutes or until tender.  Remove
   from heat; stir in sour cream and next 3 ingredients.  Spoon into a
   lightly greased 1 quart baking dish.  Sprinkle with breadcrumbs.
 
   Bake at 350øF for 20 minutes or until thoroughly heated.  Yield: 4
   servings.  Prep. time: 15 minutes  Bake: 20 minutes.  Typed in
