                          Yellow Squash Casserole

    2      pounds        yellow squash -- sliced
      1/4  cup           chopped onion
    1      can           condensed cream of chicken soup
    1      cup           sour cream
    1      cup           shredded carrots
    1      8 oz. pkg.    seasoned stuffing mix
      1/2  cup           butter or margarine -- melted
 
 Cook sliced squash and onion in boiling, lightly salted water for about 3
 minutes. Drain. In large bowl, combine chicken soup and sour cream. Stir in
 shredded carrots, and squash and onions; add salt and pepper to taste. In
 medium bowl, combine stuffing mix with melted butter. Spread half the stuffing
 mix in the bottom of a  12 x 7 x 2-inch baking dish. Spoon vegetable mixture
 on top of stuffing, then sprinkle the rest of the stuffing on top of the
 vegetable mixture. Bake at 350 degrees for 25 to 30 minutes.
