                               SORTA CASOULET

    2                    Zucchini
    1      tablespoon    Olive oil
                         Salt
                         Pepper
    4      cups          Beans With Tomatoes (recipe)
      1/2  pound         Cooked dark chicken meat
                         -- shredded
    1                    Italian turkey sausage
                         -- cooked and sliced
    1      cup           Chicken broth
    2      tablespoons   Dry sherry
      1/2  cup           Parsley -- coarsley chopped
      1/2  cup           Bread crumbs
 
 Saute sliced or diced zucchini in olive oil until brown but barely cooked. 
 Season to taste with salt and pepper.
  In a large casserole, combine the Beans With Tomatoes, chicken, Italian 
 sausage, zucchini, chicken broth, sherry, and parsley.
  The cassoulet can be made to this point and then refrigerated overnight, 
 or frozen for up to two weeks. (If you freeze it, allow it to defrost in 
 the refrigerator for 8 hours before baking.)  When ready to cook, top with 
 the breadcrumbs and bake, uncovered, at 350 F. for 30 minutes.  Increase 
 heat to 400 until breadcrumbs are lightly browned, about 10 to 15 minutes.
  Per serving:  455 calories, 36 g protein, 53 g carbohydrate, 13 g fat (3 
 g saturated), 68 mg cholestrerol, 542 mg sodium, 17 g fiber.
