                         Vegetable-Cheese Casserole

    3                    zucchini -- sliced
    1      cup           sliced mushrooms
    2      tablespoons   butter
    3                    tomatoes -- chopped
    3      cups          torn spinach leaves
                         Salt -- to taste
    8      ounces        pasta -- cooked and drained
                         {spiral, macaroni, egg noodles, spaghetti}
    1      cup           shredded Swiss cheese
    1      cup           shredded Cheddar cheese
 
 Preheat oven to 350 degrees. In a large skillet, saute zucchini and mushrooms
 in butter until softened. Add tomatoes, spinach, and salt. Simmer for 15
 minutes. Mix in cooked pasta. Place in 9 x 13-inch casserole and sprinkle
 cheeses on top. Bake for 5 minutes, or until cheese is melted.
