                  Special Company Casserole-Frugal Method

    4      cups          Potatoes
      1/2  cup           chopped onion
                         White Sauce Mix
      1/2  cup           chopped celery
    1      teaspoon      chicken Broth Base Soup
    1      8 ounces car  Sour Cream
    2      cups          graded Cheddar cheese
 
 Peel potatoes and shred in blender (I would put in a cuisinart grater) to look 
 like hash browns; rinse with cold water. Keep covered with cold water until rea
 dy to use. Cook celery and onion in small amount buffer until tender. Using 2 c
 ups cold water ,add 1 & 1/2 cups White Sauce Mix. Cook on medium heat until whi
 te sauce is thick. Add chicken broth to white sauce mix until dissolved. In lar
 ge mixing bowl, add drained potatoes, cooked onions, celery, white sauce mix, s
 our cream and 1 cup cheddar cheese. P
 ut into greased 9Xl 3 pan. Sprinkle 1 cup cheddar cheese on top of casserole. B
 ake covered @375 for 1&1/2 hours.
