                           Squash-corn Casserole

    3                    Or 4 zucchini (or yellow
                         -summer squash) sliced
    1      cup           Whole kernel corn
      1/3                Onion -- chopped
    1                    Jalapeno pepper -- seeded
                         -and chopped
                         Salt to taste
 
 Mix above ingredients and cook (or steam) until tender.  Drain and top
 with:  3/4 cup grated cheddar or Monterey Jack cheese.  Bake about 10
