                         Creamy Vegetable Soup C/P

   Amount  Measure       Ingredient -- Preparation Method

    1      large         onion -- chopped
      1/4  cup           butter
    3      medium        sweet potatoes, peeled, chopped
    3      medium        zucchini -- chopped
    1      bunch         broccoli -- chopped
    2      quarts        chicken stock OR
    2      quarts        vegetable broth
    2      medium        red potatoes -- shredded
    3      cloves        garlic -- minced
    1      can           creamed corn OR
      3/4  cup           fresh corn kernels
    1      teaspoon      celery seed
    1      teaspoon      ground cumin
    2      teaspoons     salt
    1      teaspoon      pepper
    2      cups          light cream
 
 Place all ingredients in a 4 to 5 quart crockpot except cream. Cook 
 on the low setting 6 to 8 hours or until sweet potatoes are tender. 
 Ten minutes before serving, add the cream, if using. Heat through and

 this on 10-8-96 and it was good with or without the cream. Instead of 
 the spices, I substituted 1 tsp. beaumond.Lynn
