                  Slow Cooker Lamb Shanks with Split Peas

    1      cup           dried split green peas
    3      pounds        lamb shanks
    1      large         onion -- chopped
    2                    carrots -- peeled and sliced
    2      stalks        celery -- sliced
    2 1/2  cups          beef broth
                         salt and pepper
 
 serves 4 to 6
 
 Completely soften peas by your favorite method.  Brown lamb shanks under broile
 r to remove fat; drain well.  Mix all ingredients except shanks in Crock-Pot; s
 tir well.  Add shanks, pushing down into liquid.  Cover and cook on Low for 10 
 to 12 hours.
